Tasting Notes: Black Currant | Raw Honey | Round

We have been wanting to add a Sumatran coffee to our lineup for years and we are excited that we found one that fits! This wet hulled Sumatra from the Arisarina Co-Op is a snapshot of what the region has to offer. A classic full bodied coffee with a black currant acidity and raw honey sweetness, we are really excited to add it to our menu. Many producers make this coffee possible and their dedication to quality shows in the cup. This coffee undergoes the "Wet-Hulled" process, which was created in Sumatra in response to its humid and rainy weather. Coffee grows fast in this climate, but the rain makes it difficult for the coffee to dry evenly so they developed a special processing method to circumvent this. While some found this to be a challenge in coffee processing, they innovated and founded a process that is now only done in this region, that's quite cool if you ask us!

Arisarina Cooperative has been growing great coffee and taking care of the land since 2013. Nestled in the Gayo Highlands of Sumatra, this co-op is all about improving coffee quality while keeping the ecosystem healthy. Certified organic and Fairtrade (USDA, EU NOP), Arisarina equips farmers with training to refine their processing methods and elevate their coffee.

To support its farmers, the cooperative has built out essential infrastructure—warehouses, drying spaces, and processing equipment—giving producers the tools they need to succeed. Their approach blends time-honored Indonesian coffee traditions with modern techniques, encouraging shade-growing and intercropping for a more sustainable harvest. The wet-hulling process, or giling basah, is key here with the co-op handling much of the drying and hulling to ensure consistent quality.

Sumatra’s coffee history runs deep, dating back to the 18th century when Dutch traders first introduced coffee to the island. Over generations, the region’s rich volcanic soil and humid climate have shaped its bold, earthy coffee profile—low in acidity, full-bodied, and unmistakably Sumatran. The wet-hulling process, a signature of the region, gives these beans their characteristic depth and complexity, making them a favorite among coffee lovers worldwide.
