Last harvest we enjoyed the honey processed version; this season we've been roasting the natural and it has been such a treat! If you're looking for a coffee sitting around the middle of the comfort-adventure scale with a bright fruit note settling into dried fruit as it cools, this is the coffee experience for you!
About: Coffee from Santa Matilde is partially processed at Germania, the small mill within the farm, which has depulpers, washing equipment, and drying facilities. Santa Matilde pulps the freshly harvested cherries without water to retain all of the mucilage, some coffees are also dried on the clay patio at El Carmens. Coffee dries faster on this hot surface, the Natural process takes up to 25 days to reach the optimal humidity before being stored at the El Carmens warehouse, where Santa Matilde coffee is dry milld and prepped for export.
Santa Matilde has won much recognition for the quality of their coffees, including top placement in the El Salvador Cup of Excellence in 2018 and 2019. Their passion for providing excellent coffees drives them to innovate and develop great coffees and sustainability with their community.
